In Turkey, long feasts are the norm. They are usually accompanied by Turkish meze — various snacks, including cold and hot options. Today I propose to cook fava — the most striking example of appetizing meze.

Step-by-step cooking recipe
Peel the onion from the husk and finely chop it.
Heat the vegetable oil in a deep cauldron, add half the onion and fry until transparent.
Add the peas, water and cook for 1.5 hours over low heat. If necessary, water can be added.
Turn off the heat, add salt, half the olive oil and puree with an immersion blender.
Put the finished fava in a bowl, pour the remaining oil and sprinkle with onions.
