Babaganush is a very simple oriental snack, also common in Arabic and Jewish cuisine. Traditionally, it is prepared from eggplants. It turns out a delicate and fragrant pasta for canapes, sandwiches and tartlets.

Put the eggplants in a mold, prick with a toothpick, drizzle with oil and bake for 20 minutes in the oven at 220 degrees.
Spoon out the eggplant pulp, add all the other ingredients and grind the mass in a blender.
If desired, add sesame seeds, nuts or chopped greens.
