Many are afraid of pig's head, but in fact it is a very valuable ingredient. It makes a wonderful rich jelly. Of course, there are its own peculiarities and specifics. But in the recipe I will tell you as much as possible about each step.
Ingredients
- Pork (head) – 7 kg
- Chicken legs - 1 kg
- Onion - 2 pieces
- Garlic - 2 heads
- Salt - 3 art.l.
- Carrots - 3 pieces
- Black Pepper - 1 art.l.
- Bay leaf - 5 pieces
Step-by-step cooking recipe
Cut off the ears from the pig's head and soak the head in water for 8-12 hours. Change the water periodically.
Cut it into pieces, rinse it again, fill it with water and bring it to a boil, removing the foam.
Cook for 2 hours on low heat.
Add the washed and notched, but unpeeled onions and salt.
After another 2 hours, add pepper, carrot, garlic, lavrushka and ham.
After another two hours, strain the broth.
Disassemble the meat and put it in molds. Pour over the broth.
Let the blanks cool down and put them in the refrigerator.
