Sandwiches with vegetable caviar are not too convenient to take with you on the road or to work. But this is a great snack for home, and the whole family will like it! Plus, vegetable caviar can be prepared in advance and taken as needed.
Ingredients
- Baguette - 1 piece
- Eggplant - 1 piece
- Bell pepper - 1 piece
- Tomatoes - 2 pieces
- Chili pepper - 1 piece
- Garlic - 2 teeth
- Bow purple - 0.5 pieces
- Tomato paste - 1 art.l.
- Spices and seasonings - 0.5 tsp.
Step-by-step cooking recipe
Cut all the vegetables into a very small cube. Fry the onion and after a couple of minutes add the eggplant and pepper.
After a couple more minutes, add the tomatoes and simmer under the lid for 5-7 minutes.
Add tomato paste, chili, garlic and spices, and simmer the mass for about 5 minutes until the vegetables are ready.
Cut the baguette and dry the slices in a frying pan. Put the vegetable caviar on top.
