If you don't like uniform pasty textures, try this recipe for chopped eggplant caviar. It will require more time for slicing and cooking, but what a delicious and beautiful result it turns out!
Ingredients
- Eggplant - 3 pieces
- Zucchini - 1 piece
- Bell pepper - 1 piece
- Chili pepper - 2 pieces
- Onion - 1 piece
- Tomatoes - 1 piece
- Spices and seasonings - 2 tsp.
- Olive oil - 3 art.l.
- Garlic - 4 clove
Step-by-step cooking recipe
Peel the eggplant, zucchini and tomato from the skins.
Cut all vegetables into as small a cube as possible, except chili and garlic.
Put everything in a hot frying pan with olive oil and fry for 5 minutes on high heat.
Turn down the heat and simmer the caviar for 20-25 minutes under the lid. At the end, add spices and crushed garlic with chopped chili.
