Mayonnaise is often the leader in the list of popular sauces. It is used for cooking second courses, snacks and marinades. Those who take care of the figure can prepare vegetable mayonnaise. It turns out to be just as tasty, but at the same time less caloric.

Ingredients

  • Vegetable broth (fresh) – 250 ml
  • Vegetable oil (odorless) – 200 ml
  • Mustard - 1 tbsp.l .
  • Lemon juice - 50 ml
  • Starch - 3 art.l.
  • Ground black pepper - 0,5 tsp.
  • Salt - 0,5 tsp.

Step-by-step cooking recipe

Boil 150 ml of broth.

Mix the remaining broth with starch and pour a thin stream into the boiling billet, stirring continuously.

Boil for 3-4 minutes, remove from heat and cool.

Add mustard, salt, ground pepper, lemon juice and beat well.

Without stopping the mixer, pour in the vegetable oil. Whisk everything together until the mayonnaise thickens.
