Real fish sauce is prepared for a long time and difficult. Some Thai recipes describe a process that takes about three years. I offer you a simplified version, the result of which you will be able to evaluate in a month.
Ingredients
- Anchovies - 2 kg
- Hot red pepper - 1 pod
- Lemon - half
- Bay leaf - 2 pieces
- Salt - 1 kg
- Water (boiled) – 1 l
Step-by-step cooking recipe
Wash the fish and cut it together with the head and giblets. The pieces should be of medium size.
Mix the fish with salt and put it in the prepared containers.
Finely chop the hot red pepper and lemon.
Mix boiled water, lemon, hot pepper and bay leaf.
Pour the water with spices into the containers with anchovies. Cover with lids and leave for 4-5 days at room temperature.
Put the containers in the refrigerator for 26 days.
At the end of the allotted time, discard the anchovies in a colander. The resulting liquid is fish sauce.
