Usually Georgian sauce is made from cherry plum of a special variety. I tried to cook tkemali from plums and I assure you, this option is also worthy of attention. I advise you to choose sour and unripe fruits of different varieties. Thanks to this, the bouquet of flavors turns out to be more interesting.
Ingredients
- Plums (sour) – 500 g
- Garlic - 20 g
- Hot red pepper - 1 pod
- Coriander - 0,5 tsp.
- Fenugreek - 0,5 tsp.
- Sugar - 1 tsp.
- Salt - 0,5 tsp.
- Water - 250 ml
Step-by-step cooking recipe
Cut the plums in half, peel the seeds and put them in a saucepan.
Add water and boil for 20 minutes.
Wipe the soft plums through a sieve.
Cut the hot pepper in half and peel off the seeds.
Grind hot pepper and peeled garlic in a blender.
Rub spices, sugar and salt in a mortar.
Mix plum puree, dry spice mixture, hot pepper and garlic.
Boil everything together for 20 minutes, stirring frequently.
