Pour quinoa into a small container, pour boiling water and cover for 15 minutes.

Peel the pumpkin and cut into medium-sized cubes.

Peel and chop the onion.

Heat the oil in a frying pan, add the onion and fry until golden brown.

Add the pumpkin and continue to fry for another 7-10 minutes. Stir from time to time so that the vegetables are evenly fried on all sides.

Pour quinoa, roast with pumpkin into boiling water and cook for 15 minutes.

Tear the spinach in half with your hands and add it to the soup pot.

Add salt, pepper and remove from heat. Infuse the finished soup under the lid for 20 minutes.
