To cook a juicy and soft beef steak in a frying pan, use chilled, not frozen meat. It is best to fry the steak in a grill pan, however, in the absence of such, you can use dishes with an even but thick bottom.

Choose medium-fat meat, without hard veins and areas of solid fat. If the steaks are too wet, you need to blot them with napkins.
Melt the butter in a hot frying pan and lay out the steaks. Fry over medium heat. Add a little salt or you can do without salt, add pepper. Put thyme sprigs in the oil.
For medium roast, fry the steaks for 6 minutes on each side, for weak – 4-5 minutes. Then turn off the heat and let the steaks "rest" for 7-8 minutes in a deep plate covered with foil.
Cut the steaks into slices, serve with herbs, vegetables and sauce.
