For this recipe, it is best to choose lean pulp or tenderloin. It is very important to thinly slice the meat, you can even beat it off a little beforehand. Serve beef stroganoff with mashed potatoes or boiled rice.

- Beef - 600 g
- Onion - 1 piece
- Sour cream - 200 ml
- Tomato paste - 1 tsp.
- Flour - 1 art.l.
- Water - 200 ml
- Vegetable oil (for frying) – 50 ml
- Salt - to taste
- Ground black pepper - to taste
Step-by-step cooking recipe
Cut the meat across the fibers in thin strips. Peel the onion and cut it into half rings.
Heat the oil in a large frying pan and fry the meat over high heat until tender.
Transfer the fried meat to another bowl, add more oil to the pan and fry the onion until soft.
Add 1 tablespoon of flour to the onion in the pan, mix gently and fry the onion for another minute.
Add sour cream, tomato paste and water to the pan.
Mix thoroughly and warm up the sauce, it should become homogeneous.
Transfer the fried meat to the sauce, season with salt and pepper.
Simmer the meat in the sauce until soft over low heat under the lid. It can take from 5 to 20 minutes, depending on the type of meat.
