I tried pumpkin curry in the establishment, and, of course, no one began to reveal their secrets to visitors. Therefore, I had to try different options on my own. Serve the curry with rice and garnish with herbs.
Ingredients
- Pumpkin - 400 g
- Chicken fillet - 400 g
- Coconut milk - 400 ml
- Garlic - 4 cloves
- Cumin - 0.5 tsp.
- Olive oil - 1 tbsp.l.
- Curry - 1 tsp.
- Turmeric - 0.5 tsp.
- Salt - 1 pinch
- Ground black pepper - 1 pinch
Step-by-step cooking recipe
Cut the peeled pumpkin and chicken fillet into medium cubes.
Heat olive oil in a deep frying pan, add cumin to it and wait literally 30-40 seconds.
Send the chicken fillet with chopped garlic to the frying pan and fry for 2-3 minutes.
After that, add the pumpkin, and after another 5-7 minutes pour in the coconut milk.
Add salt, pepper, curry and turmeric, stir the dish and simmer over low heat until the pumpkin and chicken are ready.
