Wash the fish, dry it slightly, remove the insides, fins and head. Use tweezers to get rid of the bones as much as possible.
Soak the bread in milk, cut the onion into slices, lard into small cubes.
Prepare minced fish: mince fish fillets, lard, onions and bread. Add chopped garlic, eggs and semolina. Add salt and pepper to taste, mix well.
Form cutlets, roll them in a small amount of flour and fry in a frying pan with hot vegetable oil until golden brown on both sides.
Ready-made carp cutlets are served to the table with fresh vegetables or mashed potatoes.
