There are many recipes for baked fish. Every time I try to cook something new. Recently baked salmon fillet with vegetables in the oven. The highlight of the dish is that tomato sauce is used here instead of lemon juice.
Ingredients
- Salmon (fillet) – 400 g
- Bell pepper (different colors) – 2 pieces
- Broccoli - 200 g
- Cauliflower - 200 g
- Carrots - 1 piece
- Green onion - 2 stems
- Olive oil - 2 art.l.
- Tomato sauce - 2 art.l.
- Marjoram - to taste
- Ground black pepper - to taste
- Salt - to taste
Step-by-step cooking recipe
Wash the salmon under running water and dry it with a paper towel.
Rub the fish with salt, ground black pepper and brush with tomato sauce on both sides.
Cut the bell pepper in half, peel the seeds and cut into strips.
Disassemble cauliflower and broccoli into inflorescences, cut large ones.
Peel the carrots and cut them into thin washers. Chop the green onions.
Put broccoli, bell pepper, carrots and cauliflower in a deep bowl, season with salt and pepper and add oil. Mix everything carefully.
Put a layer of vegetables in a greased baking sheet. Try not to crumple the soft pieces in the process.
Spread the salmon fillets on top and sprinkle with marjoram.
Cover with a double layer of foil and send it to a preheated 180 degree oven for 30 minutes.
Carefully remove the foil and continue cooking for another 5 minutes.
Sprinkle the finished fish with chopped green onions before serving.
