Salmon and eggplant are at least an unusual combination. And also very harmonious. I only advise you to add some more vegetables to the eggplant, and then in the recipe I will tell you which ones. Chop everything smaller, and then it will cook evenly and at the same time.
Ingredients
- Salmon - 400 g
- Eggplant - 1 piece
- Zucchini - 1 piece
- Bell pepper - 1 piece
- Cherry tomatoes - 3 pieces
- Grainy mustard - 1 tsp.
- Ground black pepper - 1 pinch
- Sea salt - 1 pinch
- Olive oil - 1 tbsp.l.
Step-by-step cooking recipe
Cut all the vegetables into cubes. Fill the eggplants with water for 10 minutes and rinse.
Simmer all the vegetables in a hot frying pan for 5-7 minutes and put them in a mold.
Put a piece of salmon on top, season with salt, pepper and sprinkle with mustard seeds.
Sprinkle everything with olive oil and bake for 15-20 minutes at 180 degrees.
