Eggplants have a specific texture, so making draniki simply from them is quite problematic. Most likely, you will need too many eggs and flour. But if you add them to potatoes, the situation is completely different. I'm telling you!

Step-by-step cooking recipe

Grate potatoes and onions, drain excess moisture. Add chopped parsley and crushed garlic.

Finely chop the eggplant, add to the potatoes and mix.

Add spices, egg and flour to the same place, and mix again.

Fry the draniki on both sides.
