Boil the rice until tender.

Remove the zest from the lemon and squeeze out the juice. Peel and finely chop the apple.

Beat the eggs with salt and sugar to a froth. Add the sifted flour with baking powder, and mix.

Combine all the ingredients, mix and put in a mold.

Cook the casserole in the oven for 35-40 minutes at 170 degrees.
