A very original way to cook a whole dorado. On the one hand, the fish is baked in the oven. On the other hand, it is stewed in its own juice and wine at the same time. For cooking, you will need something like a cast-iron cauldron or a special mold with a lid. But in general, you can build a form of foil folded in several layers.
Ingredients
- Dorado - 1 piece
- Spices and seasonings - 1 tsp.
- Cherry tomatoes - 4 pieces
- Capers - 1 tbsp.l .
- Celery root - 1 piece
- Olive oil - 2 tbsp.l.
- Water - 50 ml
- Wine (white) – 70 ml
- Lemon juice - 2 tsp.
Step-by-step cooking recipe
Rub the cleaned fish with spices and put it in a mold.
Coarsely chop the cherry and celery root. If desired, add onion, garlic, bay leaf or other spices.
Add capers there as well.
Mix water, oil, wine and lemon juice, and pour over the dorado.
Bake the fish in the oven under the lid for 25-30 minutes at 180 degrees.
