Moreover, the mushrooms will be around, on top and even inside the carcass. They do not need any additional preparation – they will bake perfectly in the time allocated for fish.

Cut the mushrooms into plates, chop the garlic and herbs.
Rub the peeled perch with spices. Put garlic, herbs and some mushrooms in the belly.
Put the fish in the mold on the mushrooms and put some more mushrooms on top.
Bake the perch in the oven for 25 minutes at 190 degrees.
