Kharcho is a traditional Georgian soup with beef. Few people know that the vegetarian version of this dish is not only easier for the body, but also is not inferior in taste to the classic cooking option.
Ingredients
- Potatoes - 400 g
- Fig - 100 g
- Onion - 1 piece
- Carrots - 2 pieces
- Garlic (clove) – 4 pieces
- Tomato paste - 3 tbsp.l
- Sunflower oil - 4 art.l
- Hops-suneli - 0,5 h.l .
- Bay leaf - 2 pieces
Step-by-step cooking recipe
Put water on the fire. Throw diced potatoes and washed rice into it. Add salt and cook for 10 -15 minutes. Grate the carrots on a coarse grater.
Heat a frying pan with vegetable oil. Put the chopped garlic and onion on it. Fry for 3-5 minutes. Add tomato paste, suneli hops, pepper and carrots. Simmer for 5 minutes on low heat.
Pour the contents of the frying pan into a saucepan, add the bay leaf and herbs. Boil for a few minutes. Let the soup brew for half an hour.
