Rub the cottage cheese through a sieve, add protein, ground pepper and salt. Mix well.

Roll out the dough to the desired thickness, moving in one direction.

Cut triangles of the same size.

Put a little cottage cheese on the wide edge of each.

Tuck the edges in and roll up loose rolls.

Using a silicone brush, brush the croissants with yolk.

Bake in a preheated oven according to the following scheme: 10 minutes at a temperature of 210 degrees and 15 minutes at 180 degrees.
