Defrost puff pastry in the microwave or at room temperature.

Roll out to the desired thickness and cut into identical triangles.

Cut ham and cheese into thin triangular slices.

Put cheese and ham on each billet. Starting from the wide edge, roll up a loose roll.

Cover the baking sheet with baking paper, and lay out the croissants.

Brush with a mixture of egg yolk and warm milk.

Bake the croissants for 10 minutes at 210 degrees, then reduce to 180 degrees and cook for another 10 minutes.
