Do you love cottage cheese muffins? Or maybe your children and household adore them? Then be sure to try this recipe for cottage cheese cupcakes with pumpkin. Here is my favorite dough, which is always well and evenly baked.
Ingredients
- Pumpkin - 150 g
- Chicken eggs - 2 pieces
- Cottage cheese - 250 g
- Sugar - 1 glass
- Salt - 1 pinch
- Vanillin - 1 pinch
- Ground cinnamon - 0.5 tsp.
- Baking powder dough - 1.5 tsp.
- Vegetable oil - 100 ml
- Flour - 250 g
Step-by-step cooking recipe
Mix and beat the eggs with sugar, salt and vanilla.
Grind the cottage cheese through a sieve or whisk it with a blender, and add to the egg mass. Pour vegetable oil into the same place and whisk again.
Grate the pumpkin on a grater or beat it in the same blender, and send it to the dough. Add cinnamon or other spices to taste, and mix.
Sift the flour with baking powder and gently insert it into the dough. Mix again.
Put the dough into molds for a maximum of 2/3, and bake the cupcakes for half an hour at 180 degrees.
Before serving, I advise you to sprinkle them with powdered sugar and decorate with mint leaves.
