Yeast-free baking is very popular now. I suggest today not to buy it, but to cook it yourself. Delicious croissants made from yeast-free dough are troublesome, but pleasant. Bake them and get ready to accept compliments!

Ingredients

For the first part of the dough:
For the second part of the dough:
  • Flour - 1,5 glasses
  • Lemon juice - 1 tsp.
  • Chicken eggs - 1 piece
  • Water (cold) – 100 ml
  • Salt - 0,25 tsp.
For lubrication:

Step-by-step cooking recipe

Sift the flour into a wide bowl. This will help to get rid of garbage and saturate it with oxygen.

Grate cold butter on a grater and mix with flour. You should get a large crumb.

Form a ball from the resulting mass, wrap it in plastic wrap and put it aside.

Mix the sifted flour, salt and lemon juice.

Mix the egg with water and pour it into a bowl with flour. Knead a soft dough. It is necessary to knead for a long time and intensively so that the dough turns out to be plastic.

Roll out both dough pieces into rectangles. Place one on top of the other, fold in half and put it in the refrigerator for half an hour.

Take the dough out of the refrigerator and roll it out, moving in one direction. Fold it in half again and put it in the refrigerator for 30 minutes. Repeat the steps 2 more times.

Roll out the dough and cut into identical triangles.

Starting from the wide edge, roll up loose rolls.

Cover the baking sheet with parchment paper and lay out the croissants.

Using a silicone brush, lubricate the croissants with a mixture of yolk and milk.

Bake in a well-heated oven for 30 minutes. The first 10 minutes at a temperature of 200 degrees, and then at 180 degrees.
