It's hard to imagine winter holidays without the smell of ginger baking. This smell magically spreads through the house, creating an unusual festive mood. If you are on PP, prepare ginger cookies without sugar and butter according to this recipe.
Ingredients
- Oatmeal - 360 g
- Corn flour - 170 g
- Chicken eggs - 3 pcs.
- Honey - 120 g
- Apples - 300 g
- Cottage cheese - 300 g
- Baking powder - 25 g
- Corn Starch - 3 art.l.
- Ginger (ground) – 1.5 tsp.
- Nutmeg - 1 tsp.
- Cinnamon - 3 tsp.
- Baking soda - 3 pinches
- Salt - to taste
- Sugar substitute - to taste
- Powdered sugar (optional) – for decoration
Step-by-step cooking recipe
Peel and cut the apples into small pieces, cook in the microwave for 1-2 minutes to become soft.
Sift flour, combine with corn starch, salt and baking powder.
Melt honey in a steam bath or in a microwave, add soda to it, mix, cool a little.
Combine eggs, cottage cheese and apples in a blender bowl, add honey mixture, whisk until smooth. Enter the sugar substitute and spices.
Put the mass into a bowl, gradually add a mixture of dry ingredients and knead a soft, elastic dough. Cover the dough with cling film and send it to the refrigerator for 30 minutes.
Roll out the rested dough and cut out the cookies with the help of molds.
Transfer the ginger cookies to a baking sheet lined with parchment and bake in a preheated 180 °C oven for 15-20 minutes. Decorate the cooled cookies with icing or powdered sugar.
