Khachapuri is more often made with cheese or meat than with vegetables. But still, what Georgian cuisine does without eggplant? This time we will make a fragrant tender filling from them. And so that they do not taste bitter, you can salt and rinse them in advance.

Cut all the vegetables into small cubes.

Fry the eggplant and onion until browned, add the tomatoes and fry for another 2 minutes.

Remove the filling from the heat, season and add chopped garlic and herbs.

Roll out the dough, cut into a couple of squares and put the filling on each.

Gather the corners up with an envelope and pinch.

Bake khachapuri in the oven at 190 degrees for about 30 minutes.
