Spicy adjika is traditionally made from Bulgarian pepper or tomatoes. But in fact, it can be made from different ingredients. Spicy ajika from quince has become especially popular at my house. It's a bit like apple, but at the same time completely different.
Ingredients
- Quince - 600 g
- Bell pepper - 2 pieces
- Plums - 300 g
- Garlic - 1 head
- Sugar - 25 g
- Salt - 2 pinches
- Apple cider vinegar - 1 tsp.
Step-by-step cooking recipe
Wash the quince, plums and pepper, and remove the seeds with the middle.
Put everything through a meat grinder together with garlic.
Bring to a boil, add salt and sugar, and boil the adjika for 10 minutes.
Pour in the vinegar and roll it into sterile jars.
