Zucchini and bell pepper lecho with tomatoes for winter

An incredibly popular vegetable dish, but it is rarely cooked according to a classic recipe. Most are guided by their taste, using a different set of ingredients. I cook lecho from zucchini and bell pepper with tomatoes. Try it, it's very tasty!
Ingredients
- Zucchini - 1 kg
- Tomatoes - 1,5 kg
- Bell pepper - 500 g
- Carrots - 300 g
- Onion - 300 g
- Garlic - half a head
- Vegetable oil (odorless) – 100 ml
- Vinegar - 80 ml
- Sugar - 3 art.l.
- Salt - 2 tbsp.l.
Step-by-step cooking recipe
Mince tomatoes, peeled onions and garlic.
Mix the resulting mass with butter, sugar, salt and boil for 10 minutes.
Chop the zucchini and peeled bell pepper.
Grate the carrots on a coarse grater.
Pour the vegetables into the boiling sauce and cook for another 20 minutes.
Pour in the vinegar, boil for 2 minutes and close in the prepared jars.
