Delicious preservation of inexpensive products. After spending a minimum of time and effort, you can easily prepare an eggplant salad with tomatoes and pepper. You will like this dish so much that you will definitely cook it every year.
Ingredients
- Eggplant - 2 kg
- Bell pepper - 500 g
- Tomatoes - 500 g
- Onion - 500 g
- Vegetable oil - 150 ml
- Vinegar - 150 ml
- Bay leaf - 3 pieces
- Black Pepper - 10 peas
- Coriander - 0,5 tsp.
- Sugar - 100 g
- Salt - 80 g
Step-by-step cooking recipe
Chop eggplant, tomatoes, peeled onion and bell pepper.
Mix everything in a deep saucepan, add butter, sugar, salt and spices. Cover with a lid and leave for 2-3 hours.
Simmer for 30 minutes.
Arrange the hot salad in jars, add a little vinegar to each.
Roll up, turn upside down and wrap up with a thick towel.
