Eggplant lecho without sterilization for winter

Fresh eggplant in winter is a dubious treat. They are not everywhere, they are expensive, and they do not compare with the young ones in taste. That's why I always make a lot of different preparations for the future in the middle of the season. For example, here is a great recipe for eggplant lecho, and even without sterilization.
Ingredients
- Tomatoes - 1.5 kg
- Eggplant - 800 g
- Bell pepper - 800 g
- Greenery - 1 bundle
- Garlic - 1 head
- Vegetable oil - 100 ml
- Vinegar - 100 ml
- Salt - 20 g
- Sugar - 40 g
- Spices and seasonings - 1 art.l.
Step-by-step cooking recipe
Put tomatoes through a meat grinder. Add butter, sugar and salt, and bring to a boil.
Randomly slice the eggplant, and lightly fry.
Chop the pepper, too, and send it with eggplants to a boiling tomato.
Simmer lecho for 40 minutes and add chopped herbs, garlic, spices and vinegar.
Simmer for another 7-10 minutes and roll the lecho into clean, dry jars.
