Caviar from patissons for the winter without sterilization

A couple of jars of vegetable caviar from patissons will repeatedly help out in winter when you need a delicious and quick snack. There are many different ways to cook it, and today I will share the secret of how best to do it without sterilization.
Ingredients
- Patisson - 2 kg
- Carrots - 500 g
- Bell pepper - 500 g
- Tomatoes - 500 g
- Onion - 500 g
- Garlic - 2-3 teeth
- Vinegar - 1.5 tbsp.l.
- Vegetable oil - 80 ml
- Sugar - 1 tbsp.l.
- Salt - 1 tsp.
Step-by-step cooking recipe
Finely chop the onion, grate the carrots and fry until soft in oil.
Add the remaining vegetables randomly chopped, simmer for 25 minutes and chop the caviar with a blender.
Add salt, sugar and crushed garlic, and simmer for another 20 minutes after boiling.
Pour in the vinegar 5 minutes before the end and spread the caviar in soda-washed jars.
