Ingredients
- Eggplant - 2 kg
- Onion - 1 kg
- Bell pepper - 1 kg
- Hot red pepper - 2 pieces
- Carrots - 1 kg
- Tomatoes - 1.5 kg
- Vegetable oil - 350 ml
- Sugar - 1 art.l.
- Vinegar - 3 tsp.
- Salt - 5 art.l.
Step-by-step cooking recipe
Cut eggplant into cubes. Cover with salt and pour about 3 liters of water. Leave it on for 40 minutes.
Fry the eggplants in a frying pan in a small amount of oil.
Separately fry the chopped onion, carrot, tomatoes and both types of pepper.
Mix all the vegetables, add sugar and spices to taste. If desired, pass it through a meat grinder.
Simmer the caviar for 40 minutes after boiling, add vinegar and roll it into sterile jars.
