Vegetable caviar has long become so familiar that a couple of jars can often be found even among opponents of blanks. And how many recipes can you come up with here! I share one of my favorite eggplant and tomato options with garlic.

Ingredients

  • Eggplant - 2 kg
  • Tomatoes - 1 kg
  • Garlic - 2 heads
  • Carrots - 1 kg
  • Onion - 1 kg
  • Spices and seasonings - 1 tbsp.l.
  • Vegetable oil - 200 ml
  • Salt - 2-3 art.l.
  • Sugar - 4 tbsp.l.
  • Vinegar - 100 ml

Step-by-step cooking recipe

Peel all the vegetables and garlic, and pass through a meat grinder.

Add butter, sugar and salt, and simmer all together for 40 minutes.

Add vinegar and spices, and simmer for another 7 minutes.

Spread the caviar into sterile jars and sterilize them for another 15 minutes.

Roll up the caviar for the winter.
