When we talk about borscht with mushrooms, most often we are talking about the usual champignons. But you can take something more interesting. For example, today I will tell you how to cook a delicious and beautiful borscht with chanterelles.
Ingredients
- Meat broth - 2.5 l
- Beetroot - 1 piece
- Carrots - 1 piece
- Cabbage - 300 g
- Potatoes - 2 pieces
- Tomatoes - 2 pieces
- Chanterelles - 300 g
- Onion - 1 piece
- Garlic - 2 clove
- Spices and seasonings - 1 art.l.
Step-by-step cooking recipe
Wash, peel and slice chanterelles. Boil them in salt water for 5-7 minutes.
Grate the carrots and beets on a grater, finely chop the onion. Fry everything together in a frying pan until soft. Add the grated tomatoes and mix.
Add potatoes to the boiling broth, and after 5 minutes chopped cabbage.
After another 5 minutes, add the mushrooms and the rest of the vegetables. Cook for 10-15 minutes under the lid.
Add spices and garlic, remove the borscht from the heat and let it brew a little.
