Favorite vegetable caviar is good at any time of the year, including in winter. But it is very problematic to find available eggplants and bell peppers in winter. Therefore, it is better to stock up on such a preparation in advance, and I will tell you how to do it further.
Ingredients
- Eggplant - 3 pieces
- Tomatoes - 3 pieces
- Bell pepper - 3 pieces
- Onion - 1 piece
- Garlic - 2 clove
- Sugar - 1 tsp.
- Greenery (chopped) – 2 art.l.
- Paprika - 1 tsp.
- Salt - 1 tsp.
- Spices and seasonings - 1 art.l.
- Vegetable oil - 100 ml
- Vinegar - 60 ml
Step-by-step cooking recipe
Peel the eggplants and tomatoes, and pass all the vegetables through a meat grinder.
Add butter, sugar and salt, and simmer all together for 45 minutes.
Add spices, garlic and herbs, and simmer for another 15 minutes.
5 minutes before the end, pour in the vinegar.
Roll the caviar in sterile jars for the winter.
