I love Georgian tkemali and I love trying a variety of recipes with it. For example, here is a great option from red cherry plum. Moderately sour, moderately sweet, moderately spicy – an ideal sauce for meat, potatoes, poultry, snacks and many other dishes.
Ingredients
- Cherry Plum (red) – 2 kg
- Garlic - 1 head
- Ground coriander - 1 tbsp.l .
- Hops-suneli - 1 tbsp.l .
- Hot red pepper - 4 pieces
- Sugar - 8 tbsp.l.
- Salt - 2 art.l.
- Cilantro - 1 bundle
- Mint - 3 twigs
Step-by-step cooking recipe
Remove the seeds from the cherry plum. Cover it with salt and sugar, bring to a boil and boil for 15 minutes.
Grind the mass through a sieve or grind with a blender.
Separately chop garlic, herbs and hot pepper in a blender. Add to the cherry plum.
Season the billet, boil for another 10 minutes and roll the tkemali into sterilized jars.
