Eggplant caviar with mushrooms for winter

Very tasty and fragrant eggplant caviar is obtained with the addition of mushrooms. It is prepared according to the same principle as the classic, and you can read more further in the recipe. A great snack for the holidays and just for dinner for every day.
Ingredients
- Eggplant - 1 kg
- Mushrooms - 1 kg
- Tomatoes - 300 g
- Bell pepper - 1 piece
- Onion - 2 pieces
- Vegetable oil - 3 tbsp.l.
- Vinegar - 2 tsp.
- Salt - 1.5 tbsp.l.
Step-by-step cooking recipe
Put the eggplant and pepper in the oven for 30-40 minutes at 200 degrees.
Peel them and chop them finely.
Finely chop the mushrooms with onions, and fry in oil until golden.
Chop the tomatoes in a blender.
Mix all the ingredients and simmer the caviar for another 20 minutes.
Roll it up in sterile jars.
