Georgian housewives make a lot of preparations for the winter. The shelves of their storerooms are bursting with a variety of jars, bottles and barrels. Among all this assortment you will definitely find eggplant with tomatoes in Georgian. A spicy snack is traditionally served with fried meat.
Ingredients
- Eggplant - 1 kg
- Tomatoes - 500 g
- Hot red pepper - 1 pod
- Garlic - 20 g
- Onion - 2 pieces
- Vegetable oil - 100 ml
- Vinegar - 60 ml
- Black Pepper - 4 peas
- Sugar - 2 tbsp.l.
- Salt - 2 tsp.
Step-by-step cooking recipe
Cut the eggplants and pour salted water for 20 minutes.
Flip into a colander and rinse with running water.
Put the eggplants in small portions in a cauldron with hot oil and fry until golden brown.
Mince tomatoes, hot peppers, peeled garlic and onions.
Mix the resulting mass with fried eggplant, sugar, black pepper and salt. Boil for 10 minutes.
Arrange in sterilized jars, add a little vinegar to each. Roll up, turn upside down and wrap up for a day with a warm towel.
