Squash adjika for winter through a meat grinder

In the traditional recipe, vegetable seasoning is made from sweet and hot pepper. I suggest you try an equally interesting option — zucchini adjika. To facilitate and speed up the preparation process, vegetables are passed through a meat grinder.
Ingredients
- Zucchini - 2 kg
- Tomatoes - 500 g
- Garlic - 100 g
- Hot red pepper - 100 g
- Onion - 4 pieces
- Cilantro - 20 g
- Vegetable oil (odorless) – 120 ml
- Vinegar - 100 ml
- Ground coriander - 1 tsp.
- Sugar - 1 art.l.
- Salt - 2 art.l.
Step-by-step cooking recipe
Cut the hot pepper in half and peel off the seeds.
Mince zucchini, tomatoes, hot pepper, cilantro and peeled onion.
Mix everything in a large saucepan, add butter, sugar and salt.
Boil for 20 minutes, add ground coriander and garlic passed through the press.
Soak for 10 minutes, pour in the vinegar and remove from the heat after 5 minutes.
Spread the adjika into the prepared jars and roll it up.
