Mother-in-law's tongue of zucchini with tomatoes, peppers and carrots for winter
In summer, when there are a lot of vegetables on the market, it's time to do conservation. Among other preparations, be sure to make a mother-in-law's tongue from zucchini with tomatoes, peppers and carrots. Vegetable salad perfectly complements most dishes.
Ingredients
- Zucchini - 2 kg
- Tomatoes (medium) – 3 pieces
- Bell pepper - 400 g
- Carrots - 200 g
- Onion - 200 g
- Garlic - 80 g
- Vegetable oil - 100 ml
- Vinegar - 80 ml
- Ground red pepper - 0,5 tsp.
- Sugar - 20 g
- Salt - 15 g
Step-by-step cooking recipe
Cut the zucchini into cubes. Peel and slice the tomatoes.
Chop carrots, peeled onions and bell peppers.
Fry onions and carrots in oil for 5-7 minutes.
Add the bell pepper and cook for 5 minutes over medium heat.
Add tomatoes and sugar, turn down the heat and simmer for 10 minutes under the lid.
Mix the zucchini with chopped garlic, hot pepper and salt. Set aside for 5 minutes.
Put the workpiece on a preheated frying pan with oil and fry over medium heat until golden brown.
Pour in the vegetable roast and simmer all together for 10 minutes.
Add the vinegar, mix and place in the prepared container. Roll up, turn upside down and wrap up for a day with a warm blanket.
