Classic lecho is usually made from bell pepper. But I rather like the technology itself, so I use it for cooking other vegetables. I will be happy to share a good and proven recipe of zucchini and eggplant.
Ingredients
- Zucchini - 2 pieces
- Eggplant - 2 pieces
- Carrots - 1 piece
- Onion - 1 piece
- Bell pepper - 4 pieces
- Hot red pepper - 1 piece
- Tomatoes - 1 kg
- Sugar - 2 art.l.
- Salt - 2 tsp.
- Vinegar - 4 art.l.
- Vegetable oil - 100 ml
- Spices and seasonings - 1 art.l.
Step-by-step cooking recipe
Chop the peeled tomatoes and both types of pepper in a blender.
Add butter, sugar and salt, and bring to a boil.
Randomly chop the remaining vegetables and put them in the tomato.
Cook the lecho for 40 minutes on low heat.
5 minutes before the end, pour in the vinegar.
Roll the blank into sterilized jars.
