Lecho is one of my favorite winter preparations that will decorate any lunch or dinner. In this recipe, I use bell peppers, tomatoes and eggplants to create a bright, fragrant and delicious dish for the winter. Enjoy the taste of summer at any time of the year by adding lecho to your soups, stews and other dishes.
Ingredients
- Eggplant - 1 kg
- Bell pepper - 1 kg
- Tomatoes - 1 kg
- Carrots - 500 g
- Onion - 500 g
- Vegetable oil - 150 ml
- Salt - 1 art.l.
- Sugar - 1 art.l.
- Spices and seasonings - 1 tbsp.l.
- Vinegar - 60 ml
Step-by-step cooking recipe
Randomly chop all the vegetables.
Add butter, sugar, salt and spices.
Bring the lecho to a boil and simmer for an hour on low heat.
Add vinegar and roll the lecho into sterile jars.
