Carrot caviar for winter through a meat grinder
What about carrot caviar? Warning questions, I will say right away: the taste of boiled carrots in this caviar is not felt at all. Caviar turns out delicious and moderately spicy. Prepare this bright vegetable miracle, and serve it with pasta, rice and meat dishes in winter.
Ingredients
- Carrots - 1 kg
- Tomatoes - 1,6 kg
- Garlic - 1 head
- Vegetable oil - 200 ml
- Apple cider vinegar - 1,5 art.l.
- Ground black pepper - 1 tsp.
- Sugar - 0,5 glasses
- Salt - 1 art.l.
Step-by-step cooking recipe
Peel the carrots, cut into large circles. Wash the tomatoes, cut them arbitrarily.
Pass the prepared vegetables through a meat grinder.
Add salt, sugar and vegetable oil to the resulting vegetable mass. Stir and simmer, stirring occasionally, simmer the caviar for 1.5 hours.
Add chopped garlic and ground pepper and simmer all together for another 10 minutes.
A couple of minutes before cooking, add vinegar, mix.
Pour boiling caviar into pre-sterilized jars, seal tightly, turn upside down, wrap and cool. Store the cooled workpiece in a cool, dark place.
