- Tomatoes - 1 kg
- Beans - 300 g
- Onion - 300 g
- Bell pepper - 500 g
- Carrots - 500 g
- Vinegar - 1 tbsp.l.
- Ground black pepper - to taste
- Sugar - 4 tbsp.l.
- Salt - 2 art.l.
Step-by-step cooking recipe
Soak the beans overnight in cold water. Then rinse and boil until soft, discard in a colander.
Scald tomatoes with boiling water, peel them, cut the flesh into small pieces.
Peel the Bulgarian pepper from the seeds, cut into small cubes. Also finely chop the onion. Grate the carrots on a medium grater.
Put the prepared vegetables in a saucepan and bring to a boil over high heat. Then reduce the heat, add salt, sugar and ground black pepper to taste. Cook the vegetables, stirring, for 15 minutes.
Add the beans and vinegar, mix, bring to taste, boil the vegetable dressing for another 5-10 minutes.
Pour the hot dressing into pre-sterilized half-liter jars, roll up and cool in an inverted form. After complete cooling, store the workpiece in a cold place.
