While the trip to exotic countries is postponed, prepare Thai soup with coconut milk and shrimp. The dish only seems complicated, in fact there are no difficulties. All the necessary ingredients can be found in supermarkets.
Ingredients
- Coconut milk - 600 ml
- Vegetable broth - 600 ml
- Shrimp (chilled) – 300 g
- Fig - 3 tbsp.l.
- Galangal Root - 50 g
- Onion - 1 piece
- Lemon zest - 0,5 tsp.
- Fish sauce - 2 art.l.
- Hot red pepper - 1 pod
- Tomato juice - 100 ml
- Vegetable oil - 2 art.l.
- Parsley - 3 twigs
- Salt - to taste
- Water (boiling water) – 2 glasses
Step-by-step cooking recipe
Wash the shrimp with boiling water, cool and peel off the shells.
Chop the galangal root, red pepper and peeled onion.
Pour the washed rice into the boiling broth and cook for 10 minutes.
Heat the oil in a frying pan, add the onion and fry until golden brown.
Add hot pepper, tomato juice and continue cooking for 5 minutes.
Pour the shrimp, roast, fish sauce and lemon zest into a saucepan.
After 10 minutes, add salt, pour in coconut milk and mix. Boil for 2 minutes and turn off.
Serve the dish, sprinkling with chopped parsley.
