One of the most popular eggplant snacks is mother–in-law's tongue. Each hostess has her own secrets of its preparation. Catch my favorite option – spicy eggplant with garlic and pepper. I can't imagine a festive feast without them anymore.
Ingredients
- Eggplant - 1 kg
- Bell pepper - 4 pieces
- Chili pepper - 2 pieces
- Garlic - 1 head
- Tomatoes - 1 kg
- Salt - 2 tbsp.l.
- Sugar - 4 art.l.
- Vegetable oil - 4 art.l.
- Vinegar - 2 tbsp.l.
- Spices and seasonings - 1 art.l.
Step-by-step cooking recipe
Peel the tomatoes and chop them in a blender.
Add salt, sugar, butter and spices. Bring to a boil and boil for 10 minutes.
Add the sliced eggplants and cook for another 10 minutes.
Add the bell pepper cut into strips, and after another 7 minutes - chopped garlic and chili.
Boil the snack for another 5 minutes, pour in the vinegar and roll the mother-in-law's tongue into sterile jars.
