If you like all kinds of sauces, take note of this recipe. Adjika from plums turns out sweet and sour, moderately spicy, with a slight fruity note. It is good in winter for meat and fish dishes. Choose sour varieties of plums so that the sauce is not too sweet.
Ingredients
- Plums - 1,5 kg
- Bell pepper - 2 pcs.
- Chili pepper - 1 pcs.
- Garlic - 3 heads
- Tomato paste - 2 art.l.
- Hop-suneli - 1 tbsp.l.
- Sugar - 2 art.l.
- Salt - 1 art.l.
- Greenery - optional
Step-by-step cooking recipe
Wash the plums, remove the seeds, then sprinkle with sugar and add salt. On medium heat, boil the workpiece for 5 minutes after boiling, so that the plums let the juice.
Without removing from the heat, add the tomato paste, and after a few minutes - finely chopped bell pepper and chili pepper. Boil for another 10-15 minutes, stirring.
Add the chopped garlic, stir and remove the workpiece from the heat. Enter spices and, if desired, herbs.
Using a blender, beat the adjika until smooth, put it back on the fire and bring to a boil.
Pour the boiling adjika from the plums into pre-sterilized jars, roll it up and leave it upside down until it cools completely.
