Ingredients
- Zucchini - 3 kg
- Onion - 1 kg
- Carrots - 800 g
- Chili pepper - 200 g
- Garlic - 200 g
- Tomato paste - 200 g
- Salt - 1 art.l.
- Sugar - 50 g
- Vegetable oil - 150 ml
- Vinegar - 30 ml
Step-by-step cooking recipe
Finely chop or grate the zucchini, and fry in oil until golden.
Separately fry the chopped onion and grated carrot.
Mix all the ingredients except garlic and vinegar, and simmer the caviar for an hour on low heat.
Add crushed garlic and vinegar, and simmer for another 20 minutes.
Roll the caviar into sterilized jars.
