With mushrooms in vinegar and oil, everything is clear. But there is another interesting way to prepare them for the winter – to preserve them in tomato. Fragrant chanterelles are especially good. Further in the recipe I will tell you how to cook them correctly.
Ingredients
- Chanterelles - 1.5 kg
- Onion - 500 g
- Garlic - 20 g
- Sugar - 2 tbsp.l .
- Salt - 1 art.l.
- Spices and seasonings - 1 tbsp.l.
- Tomato paste - 150 g
- Water - 150 ml
- Vinegar - 2 tbsp.l.
Step-by-step cooking recipe
Boil chanterelles for 10 minutes in boiling water, rinse and discard in a colander.
Cut them arbitrarily.
Chop the onion and garlic, and fry until golden.
Add mushrooms, sugar, salt and spices. Cook for another 5 minutes.
Add the tomato and water, simmer for 20 minutes and pour in the vinegar.
Simmer for another 5 minutes and roll the chanterelles into sterile jars.
