Grate the beetroot, finely chop the onion and squeeze out the garlic.
Add butter, sugar and salt, bring everything to a boil, and simmer for half an hour, stirring.
Pour in the vinegar, arrange the salad in sterile jars and sterilize for another 10 minutes in a saucepan with water.
Roll up the beets for the winter.
